HANE is a sushi omakase run by Chef Choi Ju-yong. With Chef Park Kyung-jae of 2-Michelin-starred Kojima as his mentor, Chef Choi maximizes the use of wild-caught seasonal ingredients. While based on the freshness of natural ingredients, deep umami and optimal texture are drawn out through the aging process. The goal is to bring out the natural flavors and textures of ingredients, and it has earned 1 Michelin star.
